Sour Stax

Back in January of 2020, we brewed a double decocted schwarzbier with Spencer, who was the Head Brewer at Little Harpeth Brewing at the time, and who now is our Head Brewer at Barrique. Little Harpeth kept half of the liquid and lagered it in ex-red wine barrels. That beer, Barrel Stacks, became the blueprint for our entire clean beer program here at Barrique, as we cold condition every one of our lagers in barrels. We took our half of Barrel Stacks and aged it in barrels with our house mixed culture.

Starting from a lager base, Sour Stax is less acidic and more quaffable than most of our other dark wild ales. Layers of freshly ground coffee and dark balsamic fruits envelop the palate, with notes of strawberry and black cherry. Only 425 bottles were made.
